A Tale of Two Beech St. Businesses

Minnesota’s and Caffe Laguna, two West End restaurants, can serve as a microcosm of Long Beach’s post-Hurricane Sandy business district.

Tom Corning, the owner of both establishments, said that while Minnesota’s sustained about five feet of flooding in the storm and was immediately gutted, rebuilt and reopened by February, Caffa Laguna’s basement had 11 feet of water and under new insurance stipulations its return is unlikely.

And Minnesota’s would have been equally difficult to reopen, Corning said, if not for the help of local contractors, electricians and plumbers.

But rebuild he did out of his pocket. The redesigned interior now sports reclaimed barn wood, better cooking and refrigeration technologies, and bamboo floors and tables are in the works.

Tom's a real good guy and I wish him the best on the return of Minnesottas. But let's be real here. At 5 -10 bucks a cocktail over, what, 20 years, he should have no problem fixing the place up. He should re-build out of his own pocket! Others are hurting worse. Just saying!

He should get the insurance he is entitled to and then pay the difference if there is any depending on his policy. He does have partners as well so please let's not bash any of them. They pay their taxes and have had a respectable business for a number of years. If you are hurting worse I feel for you, but don't take it out on someone else. They are good people! As for Laguna personally I am upset! I loved that place. This storm has brought so much negativity on this site complaining about everything. Let us appreciate what we have and look at the glass half full please.

Mr. Ferrante, you are correct. He/partners are entitled to all the insurance entitled. I guess I just got alittle carried away knowing that Minnesotas was always packed and in my mind made a ton of money. But like you said, they are a staple of the community. I'd rather them here then not. Good Luck Minnesotta's/Mr. Corning!

Mr or Mrs LB Taxpaya, Thank you. You should be an example of what this site is supposed to be. Informative, news source. Too often it is a negative site that denigrates our community. I realize things are not perfect, but intelligent dialogue would be appreciated instead of the nonsense that occurs here. Once again thanks for recognizing Minnesotas and Laguna are good businesses for our community. I am sure there are people that would disagree with that statement and they are entitled to their opinion. As for me I choose to focus on the positive that they have done for this community. Thank you Minnesotas and Laguna for all of your hard work.

There are many places to eat in LB but very few were or are as good as Caffe Laguna in Long Beach-food was great and service was always pleasant. They will be missed!
